The iodine test

Half a teaspoon of ghee in a clear glass bowl with three drops of iodine tincture sitting on it, still their own reddish brown and showing no blue, the FSSAI at-home test for starch added to ghee
  1. Put half a teaspoon of ghee into a clear glass bowl.
  2. Add two or three drops of tincture of iodine, sold at any chemist.
  3. Watch the drops for a minute.

Iodine keeping its own reddish brown is right. If the drops turn blue or blue-black, starch has been added. FSSAI names mashed potato and sweet potato among the usual ones. This is FSSAI's own test and the only one they publish for ghee at home, so be clear on what it does not cover: it finds starch, not vegetable fat, and no kitchen test settles that one.

How to use it

This ghee suits the same wide range of uses as our other ghee, from tempering and basting to frying and finishing rich gravies. Its slightly heartier flavour makes it a good match for robust, spice forward dishes where you want the ghee's own character to come through alongside the other flavours in the pot.

Compared to our Gir Cow Ghee, this ghee has a slightly earthier, more robust character, with a fuller, more savoury depth beneath its natural sweetness. Like all properly made Bilona ghee, its texture shifts with temperature, turning firmer and more granular when cool and softening again when warmed.
