The chill and smell test
- Put a small amount in the refrigerator.

- Smell the oil directly at room temperature.
Cloudy when chilled, and sharp enough to make your eyes water, is right. That pungency is the naturally occurring compound doing its job. An oil that smells unusually flat, mild or even faintly sweet may have been diluted with a cheaper, more neutral oil.

How to use it
This oil is a kitchen staple across large parts of North and East India, valued for both its pungency and its high smoke point, which makes it well suited to deep frying and long, slow cooked curries. It is traditionally heated until it just begins to smoke before use, a step that mellows its raw sharpness, and is then used for tempering, frying pakoras and vegetable fritters, and in pickles where its strong flavour helps preserve the other ingredients.
Raw, the aroma is intensely sharp and pungent, strong enough to bring tears to the eyes. Once heated to its smoking point, that sharpness mellows into a deep, warm, nutty flavour that defines much of North and East Indian cooking.
