South Indian Vegetable Sambar
Sambar is a good example of how a base oil, a finishing spoon of ghee, and a handful of spices come together in South Indian cooking to turn simple lentils and vegetables into something far more layered.

- Curry leaves
- Dried red chilli
- Mixed vegetables
- Cooked lentils
- GetPured Turmeric Powder
- GetPured Red Chilli Powder
- GetPured Black Pepper Powder
- Tamarind pulp
- GetPured A2 Bilona Ghee
- Salt
Method
- Heat Groundnut Oil in a pan and temper mustard seeds, curry leaves, and dried red chilli.
- Add the mixed vegetables and cook briefly.
- Stir in the cooked lentils, Turmeric Powder, Red Chilli Powder, and tamarind pulp.
- Simmer until the vegetables are tender and the flavours come together.
- Season with salt and a crack of Black Pepper Powder.
- Finish with a small spoon of ghee stirred through just before serving.
