The water test

  1. Stir a spoon of powder into a glass of water.
  2. Let it settle for a minute.
  3. Look at the colour of the water.

A soft, muted yellow is right, settling gradually and leaving a light residue. An intensely bright, almost fluorescent yellow-orange within seconds is a documented sign of synthetic dye such as metanil yellow. Real turmeric pigment does not disperse that fast.

How to use it

Turmeric earns its place as a near daily ingredient in Indian households, going into dal, vegetable sabzis, curries, rice, and pickles, usually added early in cooking so its flavour has time to mellow and blend in. It also pairs naturally with black pepper and ghee (see our Golden Milk combination below), and the compound curcumin, which turmeric contains naturally, is one of the reasons the root has held such an important place in Indian food and tradition for so long.

Expect a warm, earthy flavour with a distinct bitterness and a peppery finish that lingers slightly on the tongue, noticeably stronger than the mellow, mostly decorative turmeric found in many supermarket blends. The colour is a deep, almost burnt orange rather than a flat, pale yellow, and it can vary a little from batch to batch depending on the harvest, which is entirely normal for a spice grown without any standardising additives.
