The smell test
- Mix a small amount of powder with a little water.
- Smell it before anything else.
- If you have iodine tincture, add one drop and watch for a colour change.
A sharp, fruity sourness is right. A flat, chalky or oddly bland smell is worth treating as a red flag, and a blue-black change with iodine indicates added starch, used to bulk out powders priced above everyday spices.

How to use it
A small pinch of amchur brings a clean sourness to chole, aloo dishes, and dals, and it is a signature ingredient in chaat masala blends used for street food style snacks. It also works well sprinkled directly over parathas, samosas, and fried snacks just before serving, or stirred into marinades where a tangy edge is needed without extra moisture.
The flavour is entirely sour, with no heat and only the faintest hint of sweetness from the mango itself. It behaves more like a dry, concentrated substitute for lemon juice or tamarind than a traditional spice, which makes it useful whenever a recipe needs tartness but cannot afford the extra liquid that lemon or tamarind would add.
