How to use it
Coriander powder is one of the true foundation spices of Indian cooking. It forms the backbone of most curry bases, thickens and flavours gravies, and rounds out spice blends used in dals, sabzis, and marinades. A spoonful added early in the cooking process, before the chillies and other stronger spices go in, is a classic technique that lets its flavour infuse gently into the oil or ghee.
The flavour is mild and rounded, with citrusy top notes, a gentle sweetness, and a soft nuttiness underneath. It is not a spice that shouts for attention on its own. Instead, it works quietly in the background of a dish, smoothing out sharper, hotter spices like chilli and black pepper so that a masala tastes balanced rather than one dimensional.
