The water test

  1. Stir a heaped spoon into a glass of room temperature water.
  2. Leave it undisturbed for two minutes.
  3. Look at the colour in the water, then at what settled.

Gradual, even colour is right, and the sediment should look like fine chilli. Streaks of bright colour sinking straight down like dye, or a gritty sandy layer at the bottom, point to added water-soluble synthetic colour or bulking agents like brick powder.

How to use it

This is very much an everyday, workhorse spice. Use it to build the base of a curry, stir it into a hot tempering (tadka) of oil or ghee, dust it over bhel, sev puri, or roasted peanuts for a quick kick, or fold it into a marinade for paneer and vegetables before grilling.
