The blotting paper test
- Put a small drop of oil on plain white blotting or filter paper.
- Leave it undisturbed for about twenty four hours.
- Separately, chill a little oil, then let it warm back up.
Little to no mark on the paper is right; a persistent greasy stain points to mineral oil. Genuine groundnut oil also turns slightly cloudy and begins to thicken when chilled, then returns to clear at room temperature.

How to use it
Groundnut oil has a naturally high smoke point, which has long made it a preferred choice for deep frying and tempering in several regional Indian cuisines. It suits frying, tempering, and stir frying particularly well, adding a gentle nuttiness that complements rather than overwhelms the other ingredients in a dish.
The flavour and aroma are mildly nutty and noticeably more pronounced than refined groundnut oil, with a light golden colour that reflects its minimal processing.
