The throat test
- Chill a small amount in the refrigerator for a few hours.
- Look for cloudiness or partial solidifying.
- Warm some back to room temperature and taste a spoonful.
A peppery, slightly bitter catch at the back of the throat is right, sometimes enough to bring on a light cough. A diluted or refined oil tastes flat and oily, largely without character. The chill test alone is not conclusive; taste is the reliable one.

How to use it
Because much of its flavour and its natural polyphenols are lost once heated to high temperatures, extra virgin olive oil is best used raw or with gentle heat. Drizzle it over salads, finished pastas, or roasted vegetables, use it as the base for dips like hummus, or use it for light sauteing where you actually want its flavour to come through.
The flavour profile is fruity, grassy, and peppery, with real body and a noticeable bite on the finish that lighter, more processed oils simply do not have. This is an oil meant to be tasted, not just cooked with unnoticed in the background.
