The float test

  1. Sprinkle a little powder onto the surface of a glass of water.
  2. Leave it undisturbed for a minute.
  3. Look at the surface first, then at what settled.

Powder that wets, sinks and leaves a clear surface is right. Anything still floating, whether pale flecks or a fibrous, strawlike look, is sawdust or powdered bran used to bulk the pack out, which is the adulterant FSSAI names for ground spices. If you ever buy whole pepper there is a second FSSAI test: drop a handful into water, and peppercorns sink while dried papaya seed floats.

How to use it

Often called the king of spices for the way it lifts and sharpens other flavours around it, black pepper owes its characteristic bite to a compound called piperine. Use it as a finishing spice on soups, salads, and grilled vegetables or paneer, or as a base ingredient in spice blends, marinades, and South Indian preparations like rasam and pepper flavoured curries. It also pairs beautifully with turmeric and ghee, a combination we cover below.

The heat is sharp and immediate rather than slow building, with a woody depth and a faint citrus like brightness underneath. It is a completely different kind of heat to chilli, quicker to hit and quicker to fade, which is why the two spices are used for different purposes rather than as substitutes for one another.
