The palm test

An open palm holding whole cumin seeds, the skin clean and unstained after rubbing them
  1. Take a small handful of seeds.
  2. Rub them firmly between your palms for a few seconds.
  3. Look at your skin.

Clean palms are right. Genuine cumin transfers no colour at all. A dusty tint, especially greenish or brownish, means the seeds have been dyed, usually to disguise grass seed or another cumin look-alike.

How to use it

Cumin whole is used constantly for tempering, dropped into hot oil or ghee at the very start of cooking dal, vegetables, and curries so its aroma infuses the fat before anything else goes into the pan. It is also roasted and ground fresh for garam masala style blends, sprinkled over rice dishes like jeera rice and pulao, and used whole in pickles and chutneys.

Raw, the seeds taste faintly bitter and grassy, but the real character of cumin only reveals itself once heat is applied. Toasting the seeds dry in a pan, or dropping them into hot oil or ghee, releases a warm, earthy, slightly smoky and nutty aroma that is instantly recognisable in Indian cooking and forms the base note of countless dishes.
