South Indian Vegetable Sambar

Sambar is a good example of how a base oil, a finishing spoon of ghee, and a handful of spices come together in South Indian cooking to turn simple lentils and vegetables into something far more layered.

Method

  1. Heat Groundnut Oil in a pan and temper mustard seeds, curry leaves, and dried red chilli.
  2. Add the mixed vegetables and cook briefly.
  3. Stir in the cooked lentils, Turmeric Powder, Red Chilli Powder, and tamarind pulp.
  4. Simmer until the vegetables are tender and the flavours come together.
  5. Season with salt and a crack of Black Pepper Powder.
  6. Finish with a small spoon of ghee stirred through just before serving.
